Birthday Cupcakes
Note: These can be served plain or with frosting. We top them with fresh whipped cream sweetened with maple syrup.
Ingredients
1 cup granulated sugar
1/2 cup unsalted butter, room temperature
1 egg
1/2 teaspoon vanilla extract
1 1/2 cups all purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1 cup unsweetened applesauce
Served every Thursday afternoon for a simple celebration of all birthdays for the week!
Directions
Preheat oven to 350 degrees F and line cupcake pan.
In a large bowl, cream butter and sugar with hand mixer or stand mixer until light and fluffy, about a minute.
Add egg and vanilla and mix until combined.
In a separate bowl, combine flour, salt, cinnamon, ginger, nutmeg, baking powder, and baking soda.
Add half of the dry ingredients to the butter mixture and stir until just incorporated. Add half of the applesauce and mix until just incorporated. Repeat once more until all ingredients are incorporated into batter, making sure not to overmix.
Fill cupcake liners 2/3 full and bake for 18-21 minutes if normal sized (If you are making mini cupcakes, bake for 12- 16 minutes). Cupcakes are done when a toothpick inserted comes out clean.
