Quinoa Granola Bars
Ingredients
1 1/4 cup oats, ground to course flour
1 cup cooked quinoa
1/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
2 medium bananas
1/4 cup peanut butter
1 tablespoon vanilla extract
1/4 cup mini semisweet chocolate chips
Directions
Preheat oven to 350 degrees F. Line a 9x9 baking pan with parchment paper.
Combine all dry ingredients except chocolate chips.
In a medium bowl, add eggs, bananas, peanut butter, and vanilla. Whisk or beat to combine.
Pour wet ingredients over dry ingredients, stir to combine, and fold in chocolate chips.
Transfer to baking pan and bake for 25-30 minutes until a toothpick inserted comes out clean and the bars spring back when touched.
